Not Your Grandmother's Green Beans........



I thought it would be fun to share 2 of my favorite green bean recipes....I feel like people are always looking for ways to spice up there veggies, quick and easy........

First I do the always favorite "Green Bean Casserole", sans.....the creamy canned soup-yuk!-----we jazzed this up with "blonde onions"....a slow cooked thinly sliced onion with no color,  "blondes do have more fun, dont they?"

Then I go to Spain, with some Crispy Manchego Breadcrumbs- tossed with Sauteed Green Beans.......

Both , delicious!

Method- "Green Bean Casserole"

1 lb cleaned green beans, blanched ( for more on blanching visit http://www.ehow.com/how_13887_blanch-vegetables.html)
1 large Vidalia Onion, thinly sliced
2 tblsp unsalted butter
1/2 c plain breadcrumbs
1/2 c grated fresh parmesan

-blanch green beans and set aside. thinly slice your onion and cook on low in your butter, for about 15 minutes until soft & translucent-
toss Onion & Beans together & move to oven safe baking dish
top with breadcrumb, parmesan mixture & broil for 3 to 5 minutes.......

what an addicting treat!

"Spanish Green Beans"










Method- "Spanish Green Beans"
1 lb cleaned green beans, blanched ( for more on blanching visit http://www.ehow.com/how_13887_blanch-vegetables.html)
2 tblsp unsalted butter
1/2 c plain breadcrumbs
1/2 c grated manchego cheese
1 Lemon, Zest & Juice

-blanch Green Beans & Set aside...
melt butter & stir in both Bread Crumbs & Manchego Cheese....heat a non stick pan with 1 tsp olive oil & add your Green Beans,  toss till lightly crisped. 
Add your Breadcrumb mixture & toss.
Add lemon Zest & Lemon Juice & serve...
Impressive side dish............and very easy.
