The forgotten Crudite Platter....

Who doesn't love a gorgeous platter or basket full of fresh vegetables? 

I myself find it essential to every party .....not only do they look appealing (and quite impressive), they also taste great & are usually the only healthy option!
...you can serve a variety of vegetables, steamed or raw...and always a great dip...my favorite is a delicious home made pesto!

here a just a few ideas for presentation....why not try one at your next party! (maybe Sunday??)
..........and doesn't it sound much more fun to say "crudite platter" than "carrot stick/ranch plate"???

Pesto-
2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan
1/2 cup extra virgin olive oil
1/3 cup pine nuts, toasted
2 medium sized garlic cloves
Salt and freshly ground black pepper to taste

METHOD
1 Combine the basil in with the pine nuts, pulse a few times in a food processor. Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Makes 1 cup.
