One of my favorite bars in NYC has this amazing thin crust pizza with caramelized onions & truffle oil...it is to die for.............
This is my take on it, with one very secret ingredient that will keep everyone guessing!!
1 ball pizza dough- fresh or store bought
1/2 c grated parmesan cheese
1/2 c grated asiago cheese
truffle oil, for drizzling
1 red onion, thinly sliced
2 tblsp olive oil
1 tsp fresh thyme leaves, chopped
1/4 c pistachios, finely chopped
Fresh Pepper, to taste
flour, for dusting
method: Pre heat oven to 450*
1. Warm a small saute pan with your olive oil, add sliced red onion and cook until very soft and caramelized, about 25 minutes. Stir in thyme leaves
2. Meanwhile, flour your surface area and roll & pull your doll into a long very thin crust. Transfer to oiled baking sheet or pizza stone
3. Sprinkle a bit of your parmesan & all your pistachios over your dough, top with cooked onions. Then sprinkle with all remaining cheeses
